What can happen if street food comes to Europe?

Street food is not the same as food carts. In my experience food carts in Europe, serve almost the same food as the restaurants. They operate in farmer's markets, near beaches, mostly seasonal, prices are almost similar to restaurant prices and do not operate outside of regular work hours. Sometimes in some places there are food carts operating near office or downtown areas catering to office goers.

Along the European expressways, there are service areas with gas stations, charging points and some variant of a food courts and restrooms. Nothing else along the way - as in the roadside, that can make a long drive more lively or entertaining. In Asian countries, driving along the national highways or expressways is a delight. They are interspersed with brightly lit eateries serving a variety of cuisines, including a lot of street food. By definition street food is something that is sold by one person on his cart or bicycle with a contraption holding his wares, that is either hot or cold. The food is cooked live in front of you and good for in-between munching or snacking. It is rarely a full meal. One very important caveat - that by virtue of the nature of the business - it is not operated in very clean surroundings.

Most of the street food is also spicy and flavourful, not niche, but very tasty. One look at a street food stall, immediately triggers a compulsive urge - which is irresistible. Well not all of them but many of them, depending on the time of day, the state of your hunger levels, your craving index and most of all the look of the stall .. some of them are so characterful that you cannot just resist.

How will European expressways morph if street food stalls are allowed along side them?

Firstly, I assume that each lay-by along the expressway would have one or two such stalls. Hence, there will be lot more people willing to stop at the lay-by and savour the delicacies. The number of lay byes would have to increase with increasing footfall. People will be encouraged to go out for long drives mainly to try a much expanded variety of cheap and exciting cuisines! Traffic on expressways would increase, leading to higher toll collection. People would drive more or start exploring different types of food hence creating a demand for a broader range of cuisines even in the cities. Driving on the expressways would become far more interesting than today. The food stalls will add colour and character to the rather drab looking expressways of today.
